<p><font color="#0000ff" size="4"><strong>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 荷兰栽培蘑菇的通用配方为：草:粪:石膏=1:0.8:0.08。一般而言，1000kg麦草加上所有添加物后可产生3100kg二次发酵料。或者计算为：1800㎏草、粪×60%(发酵剩余)÷35%（含水率）=3085㎏。例如，27t草+22t粪、石膏等添加物→83.7t二次发酵料。</strong></font></p>
<p><font color="#0000ff"><font size="4"><strong>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 荷兰堆料所用的原材料是麦草、鸡粪（少量马粪）和石膏。关于这些原材料的化学成分，荷兰的L.J.L.D.van Griensven博士在其著作《THE CULTIVATION OF MUSHROOMS》中提供了数据（表1）。</strong></font></font></p>

<p><font color="#0000ff"><font size="4"><strong>（1）麦草 &nbsp;小麦草的含氮量为0.54%（因产地不同有差异，例如笔者实测我国新疆小麦草的含氮量为0.7%）。小麦草经过二次堆料发酵，仍有较合适的柔韧性而透气良好，是生产蘑菇的最佳材料，单位面积产菇量可超过30㎏/㎡。因而国外的蘑菇工厂都以小麦草为堆料的主料，尽管其收集成本高于其它作物秸秆。理论上，禾本科作物的秸秆约与籽粒等重，例如667㎡（1亩）麦田如果产麦粒400kg，也应该产出同等重量的麦草。但是由于收割机留茬较高，实际能收集的麦草较少，一般667㎡可收集200㎏左右。麦草晒干后最好打成捆贮放。优质小麦草呈金黄色，质地坚挺，燕麦草和大麦草质地较软而次之。水分过高或贮藏不当，麦草容易发热霉变。</strong></font></font></p>
<p><font color="#0000ff" size="4"><strong>培养料是蘑菇栽培的基础，永远要把堆料放在第一位。要选用优质麦草，这对保障堆料的良好透气性非常重要。</strong></font></p>
<p><font color="#0000ff"><font size="4"><strong>（2）鸡粪 &nbsp;肉鸡粪含氮量较高，可达4.5%；蛋鸡粪含氮量较低，约为2.5%。鸡粪营养成分齐全，还有未消化完全的饲料颗粒。以鸡粪为主料的堆料发热快，蘑菇产量高；缺点是鸡粪碱性较强，因此需要掺入较多的石膏粉。如果采用鲜鸡粪的堆料未经二次发酵，蘑菇易感染病虫害。</strong></font></font></p>
<p><font color="#0000ff"><font size="4"><strong>（3）马粪&nbsp; 含氮为1.3%，性热、质松，保水性强，发酵效果好，因而马厩肥是荷兰传统的蘑菇堆料原料。</strong></font></font></p>
<p><font color="#0000ff"><font size="4"><strong>（4）石膏&nbsp; 又叫硫酸钙（CaSO₄），略溶于水。堆料用的是石膏粉，其经过煅烧，又称为熟石膏，具有脱粘、吸湿和形成团粒的作用。此外，石膏可提供蘑菇对硫、钙营养元素的需要，促使堆料中可溶性磷、钾迅速释放，供蘑菇菌丝吸收利用，从而提高菇体重量。石膏为中性弱酸盐类，不能直接矫正堆料酸碱度，但具有缓冲作用，维持酸碱度不发生大的变化。</strong></font></font><font color="#0000ff" size="4"><strong>当堆料pH值较高时，导致挥发性氨增多，下式反应向右进行：</strong></font></p>

<p><font color="#0000ff" size="4"><strong>&nbsp;&nbsp;&nbsp;&nbsp; 加石膏后反应向左进行，固定性铵增多。生产实践表明，堆料中添加鸡粪而使氨含量较高时，添加石膏的缓冲作用是较为重要的。有关数据列于表2。</strong></font></p>

<p><font color="#0000ff" size="4"><strong>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 自表中数据可以看出，增加鸡粪用量，堆料的含氮量稍有增加，但氨含量和pH值却明显增加。添加石膏再经过二次发酵，pH值与氨含量都有所降低。pH值越高，气态氨越多；而高pH值和高氨同时出现会出现危险，严重时有可能绝收。生产实践表明，二次发酵前的堆料，其氨含量在0.3～0.4%为适，超过0.4%时将严重影响蘑菇产量。这些结果表明，在含氨量高的堆料中添加石膏可中和氨气。不用石膏则可能由于存在游离氨而导致栽培失败。荷兰蘑菇专家推荐的堆料配方，石膏粉添加量一般为草、粪干重的8％，要在混料时加入，不宜过晚。</strong></font></p>
